grannie’s old-fashioned
butterscotch bars

98B< at 350° for 25 minutes
1/2 cup ( 1 stick) unsalted butter
13/4 cups packed light-brown sugar
2 eggs
2 cups self-rising flour
1 teaspoon butter rum extract
1 cup chopped pecans
Confectioners’ sugar, for dusting
( Heat oven to 350°. Coat a
13 x 9 x 2-inch baking dish with
nonstick cooking spray; set aside.
) Melt butter in a medium-size
saucepan. Add sugar, eggs and flour to
saucepan and mix until well blended.
Stir in butter rum extract and pecans.
* Pour into prepared baking dish and
bake at 350° for about 25 minutes or
until toothpick inserted into center
comes out clean.
+ Cool completely on a wire
rack and dust with confectioners’
sugar. Cut into 24 squares
and serve.
